Happy Tuesday! I hope everyone had a good Monday. We are another day closer to Friday so turn that frown upside down! I’m thinking of all my friends and fellow bloggers in the northeast and along the east coast still getting hit with the snow 😦
This week the Fit Dish is dishing out on our favorite healthy recipes.
I actually picked up this recipe from a co-worker and over time tweaked the recipe to incorporate the freshest and healthiest ingredients possible.
Prep Time: 30 minutes
Cook Time: 15 minutes
Ingredients you’ll need:
1 Organic Pizza Crust (or dough) of your choice (homemade or store bought)
4-6oz of Goat Cheese (more or less depending on your preference)
1 small red onion (diced)
3 strips of Turkey Bacon
1 cup of tomato sauce (low sodium or no salt added)
1 tsp Organic Virgin Coconut oil
First, begin by cooking your bacon. Either on the stove or in the microwave or oven. I prefer the oven for an easy clean up. Follow the package instructions and cook to your level of crispiness. Keep in mind the bacon with have additional cook time when topped and thrown back in the oven as a whole pizza.
Once the bacon is cooked, remove bacon from pan and let drain on a paper-towel covered plate, set it off to the side to cool down. In the meantime start sautéing your onion. I use coconut oil in lieu of regular olive oil. I am also not a huge fan on onion but I do like the taste it counteracts with the goat cheese, so I used less than half of what the recipe called for.
After your bacon has had some time to cool down, chop it up. I prefer mine to be in strips rather than crumbles.
Now you can begin to assemble your pizza!
Spread the sauce over the crust/dough, leaving a 1/4 to 1-inch border.
Crumble the goat cheese on top.
Spread the onions over the cheese.
Crumble the bacon on top.
Bake on 400 for 10-12 or until desired level of crispiness is reached.
